Ingredients
300gunhulled sesame seeds
150graw honeyGreek thyme honey preferred
0.25teaspoonfine sea saltoptional
neutral oilfor greasing parchment
Instructions
Toast sesame seeds in a dry skillet over medium heat, stirring constantly, for 4-5 minutes until golden and fragrant. Transfer to a bowl.
Line a baking sheet with oiled parchment paper. Prepare a second sheet of oiled parchment and an oiled rolling pin.
Pour honey into a small heavy-bottomed saucepan over medium heat. Cook without stirring to 150 degrees C (300 degrees F), about 8-10 minutes.
Remove from heat. Add toasted sesame seeds and salt. Stir quickly until all seeds are coated.
Pour onto prepared parchment. Cover with second oiled parchment and roll to 5-7mm thickness. Remove top parchment.
After 3-4 minutes, score into bars with a sharp knife or pastry scraper.
Cool completely at room temperature for 30+ minutes until hard. Snap along scored lines.
Notes
Cook honey precisely to the hard-crack stage (150 degrees C / 300 degrees F) for crispy bars that snap rather than bend. Score while still warm. Store in an airtight container at room temperature with parchment between layers for up to 3-4 weeks.
