Prime Rib for Two

A perfectly cooked prime rib roast scaled for two — deeply seasoned, slow-roasted to a gorgeous medium-rare, and finished with a rich au jus. A steakhouse-quality dinner at home.

Ingredients

  • 1 whole Prime Rib From 2lbs-19lbs
  • 1 To Taste Salt & Pepper
  • 1 To Taste Montreal Steak Seasoning
  • 2 tbsp. Garlic Confit See Recipe on How to
  • 2 tbsp. Olive Oil

Instructions

  • Gather, wash your ingredients and lets bring it to the board.

  • Place your prime rib of size choice on a tray and season with Montreal seasoning, salt & pepper.

  • Scoop garlic confit on top of meat and begin to spread all over meat.

  • Make sure to rub the garlic and seasoning all over meat well, getting the edges as well.

  • Heat a skillet to a high temp add olive oil and place meat in skillet to begin the searing process.

  • Make sure you sear all sides of the meat. Using tongs turn meat to sear edges.
    * Quick Tip:
    If you are using a larger piece of prime rib, you will sear in the oven at a high roasting temperature.

  • Once meat has been seared on all sides you can add a bit more garlic on top and a bit more seasoning with a sprig of thyme.
    *Quick Tip:
    Don't worry about too much seasoning because remember you can not season the center of the meat. Your Crust is all the Flavor.

  • Place in a 375° degree oven for 15-25 minutes. of course that varies on steak
    *Quick Tip
    Using a thermometer place in certain of beef internal temp at 120°=Medium Rare, 130°=Medium 145°= Medium Well

  • Pull from oven at desired temperature. It should have a nice golden crust.

  • Slice it against the grains of the meat and enjoy a prime rib for two. In this case my other half likes it medium done.

Notes

This Cut of meat is mostly cooked during the holidays. It has a nice fatty and juicy taste when seasoned correctly and cooked to your desired temperature. Make sure you let the meat rest a while before slicing. This will let all the inner juices flow back to there normal levels and wont leak out. If you slice it right out of oven the juices will bleed out and will before dry.
