Bring a large pot of well-salted water to a rolling boil. Add the broccoli rabe and blanch for 60 seconds — not more. Transfer immediately to a bowl of ice water to stop the cooking and lock in the color. Drain and set aside.Chef tip: The blanching water should taste like the sea. Under-salted water means bland greens.
Heat a wide saute pan over medium-high heat. Add the olive oil. Once the oil shimmers, add the sausage rounds in a single layer and resist the urge to move them. Let them sear for 2 to 3 minutes until deeply golden on the cut side, then flip and repeat. You want caramelization — that is your flavor base.
Once the sausage is fully cooked through and browned on both sides, reduce the heat to medium. Add the minced garlic and red pepper flakes directly to the pan. Stir and cook for 30 seconds, just until the garlic is fragrant. Do not let it brown.
Add the blanched broccoli rabe to the pan. Toss everything together to coat the rabe in the rendered sausage fat and olive oil. Season generously with salt and pepper. The rabe picks up the flavor of the pan quickly — 1 to 2 minutes of tossing is all it needs.
Pour in the white wine and stir, scraping up any browned bits from the bottom of the pan. Let the wine reduce for 1 to 2 minutes. Remove the pan from the heat and add the cold cubed butter, swirling the pan or stirring gently until the butter melts into the sauce and it turns glossy and cohesive.Chef tip: Off-heat is critical here. If the pan is too hot when you add the butter, the sauce will break. Take the pan off the burner first, then add the butter.
Use tongs to transfer the broccoli rabe and sausage to plates or a wide bowl. Spoon the pan sauce over the top. Serve immediately — this dish does not wait well. The broccoli rabe absorbs the sauce as it sits.

Serving ideas: Over pasta is the most satisfying way to serve this. Rigatoni or orecchiette work best — they catch the sauce in ridges and hollows.
