Rice pudding is the dessert equivalent of a warm blanket — and this five-ingredient version is the one I make when I want maximum comfort for minimum effort. Long grain rice simmered slowly in whole milk with sugar, vanilla, orange zest, and cinnamon: no eggs to temper, no oven, no tricks. Just one pot, forty minutes, and a wooden spoon.

Why Only Five Ingredients Work
Traditional rice puddings often lean on eggs or cream for richness. This one gets its body the honest way: the rice’s own starch, released through slow simmering and frequent stirring, thickens the milk into a natural custard. Whole milk is the floor — its fat carries the vanilla and cinnamon. The orange zest is the quiet star of the recipe: just a quarter of an orange’s worth perfumes the entire pot and keeps all that dairy from tasting flat.
The Method That Prevents Scorching
Start the milk in a nonstick pot and bring it to a high simmer — almost boiling, never rolling. Add the rice and then commit to stirring frequently; rice that sits on the bottom of a milk pot scorches quickly, and one scorched patch flavors everything. As the rice begins to fluff and swell, the sugar, vanilla, and zest go in. From there it is patience: the mixture thickens gradually as the milk reduces and the starch does its work. You are done when the spoon leaves a brief trail across the bottom of the pot.
Loose Now, Thick Later
Pull it from the heat a little looser than you want to eat it — rice pudding sets dramatically as it cools, and what looks perfect hot becomes stodgy cold. Serve it warm and spoonable, or chill it into a firmer, sliceable pudding; both camps are correct, and the texture is genuinely a different dessert each way. Dust with ground cinnamon just before serving.
Make It Yours
This base takes additions gracefully: fold in raisins or dried cranberries in the last ten minutes so they plump, add a cinnamon stick to the milk at the start, or finish with toasted almonds. Swapping almond or oat milk works too — they are thinner, so expect a longer reduction and a slightly lighter pudding. For another old-world dessert in the same spirit, try my melomakarona, and top a chilled bowl with fresh whipped cream.
FAQ
Why is my rice pudding gluey?
Usually over-reduction or overcooking the rice. Pull it while it still flows off the spoon, and remember it thickens as it cools — you can always loosen leftovers with a splash of warm milk.
Can I use leftover cooked rice?
Yes — simmer it in the milk for about 15 minutes instead of 40. The texture is slightly less creamy since less starch releases, but it is a fine weeknight shortcut.
How long does it keep?
Four to five days covered in the refrigerator. It thickens each day; stir in warm milk to revive it.
