This is avgolemono the way it lands on a family table on a cold night — not the restrained, silky first-course soup, but a full meal in a bowl: poached chicken pulled off the bone, carrots, celery, and onion sweated in olive oil, pasta or rice for body, and the egg-lemon finish that gives Greek cooking its brightest signature. Growing up, this was the soup that answered every ailment and every gray afternoon. The vegetables and a whole chicken turn it into genuine one-pot dinner territory, and the avgolemono — beaten eggs sharpened with lemon — transforms plain broth into something velvety and alive.

Build the Broth First

Start by simmering a whole chicken (or thighs, which are more forgiving) for 25–30 minutes. While it cooks, sweat your onion, carrots, celery, and garlic in olive oil with a spoonful of chicken base until translucent and sweet — this second layer of flavor is what separates a rich soup from a watery one. Strain the poaching liquid into the vegetables, then pull the meat off the bones in generous shreds.

The Egg-Lemon Finish Without Fear

The avgolemono step scares people because eggs plus hot liquid can mean scrambled soup. The insurance policy is tempering: beat the eggs with the lemon juice, then whisk in hot broth a ladleful at a time to warm the eggs gradually before stirring the mixture back into the pot — off the boil. Done this way, the eggs thicken the soup into satin instead of curdling. Take your time with this step; it is two extra minutes for a perfect finish.

Pasta, Orzo, or Rice?

All three are traditional in one kitchen or another. Ditalini gives you a hearty, spoon-friendly bite; orzo is the taverna classic; long-grain rice makes the most delicate version. Whichever you choose, cook it in the soup so it drinks in the broth — but if you plan on leftovers, cook it separately and add per bowl, or it will absorb half the pot overnight.

FAQ

Can I use rotisserie chicken?

Yes — use good stock in place of the poaching liquid and add the shredded meat near the end. You lose a little depth but save half an hour.

Why did my soup curdle?

The eggs hit too much heat too fast. Temper slowly, keep the pot below a boil after adding the mixture, and never walk away mid-step.

Can I freeze it?

Egg-finished soups do not freeze gracefully — they can separate when reheated. Freeze the base before the avgolemono step and finish fresh when serving.

How thick should it be?

Coat-the-back-of-a-spoon thick, not gravy. If you want it richer, an extra yolk in the avgolemono does it.

Ingredients

  • 1 whole Chicken or 5 Chicken Thighs.
  • 1 whole Spanish Onion Small Dice
  • 4 stalk Celery Small Dice
  • 3 whole Carrots Small Dice
  • 4 clove Garlic Minced
  • 1 whole Eggs Whole
  • 3 whole Eggs Yolks Only
  • 4 tbsp Lemon Juice fresh
  • 1 tbsp Chicken Base
  • 1 cup Ditalini Pasta / Orzo / Long Grain Rice
  • ¼ cup Olive Oil
  • ¼ cup Butter
  • ¼ cup All Purpose Flour

Instructions

  • Boil a whole chicken or chicken thighs for 25-30 minutes set aside.

  • Heat the sauce in a second sauce pot with olive oil.

  • Add the carrots, onions, celery, chicken base and garlic.
  • Stir well cook until its translucent.

  • Remove cooked chicken from sauce pot and pour through a strainer into the vegetable mixture.
  • As you bring mixture to a boil, in separate bowl remove skin, bones and cartilage from your chicken.

  • In a sauté pan, add ¼ butter and ¼ flour to make white roux. Please see our roux recipe located in the "How To" section of our website. Set aside.

  • Once the soup reaches a boil, simmer and skim to remove the impurities.

  • With a hand blender, puree the vegetables into the soup until its dissolved.

  • Optional: You can strain out the pureed vegetables or leave them in the soup for added flavor.
  • Place the chicken and choice of pasta into the soup pot and stir for approximately 3 minutes to ensure they don't stick to bottom of pan.

  • As that soup simmers, in a bowl: place 1 whole egg and 3 egg yolks and whip well adding 4 tbsp(s)of lemon juice to your egg mixture. Set aside.

  • Add the freshly made roux into the soup pot.

  • Next, temper the eggs in a bowl and pour them into the pot.

  • For best result, season with salt & pepper to taste.

Notes

Avgolemono "αυγολέμονο" is a classic Greek soup. It get its smooth and thick consistency from the eggs.  They are tempered by using the hot chicken broth and whisked into the soup just before serving. The best ingredient is the addition of the lemon juice. Shredded boneless, skinless chicken breast makes this soup hearty and healthy.
