Unlike sausages made in a casing, sheftalies get their shape and their incredible flavor entirely from how the meat is seasoned and how the caul fat renders during grilling.
The seasoning is simple but deeply aromatic: grated onion, fresh flat-leaf parsley, a touch of ground cinnamon, salt, and pepper. Why Caul Fat Makes All the Difference
Caul fat is the secret weapon of sheftalies. As the sausage grills, the caul fat slowly renders, basting the meat continuously from the outside in. It crisps up to a beautiful golden lacework on the outside while keeping the interior incredibly moist and flavorful. There is simply no substitute — sausage casing will not give you the same result. The good news is that caul fat is easy to source: ask your local butcher and they will almost certainly have it, often for very little cost.

Authentic Sheftalies – Cypriot Grilled Sausage
Ingredients
For the Meat Mixture:
- 2 lb ground pork 80/20 fat ratio
- 1 medium onion grated
- 1/2 cup fresh flat-leaf parsley finely chopped
- 1 tsp ground cinnamon
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp dried mint optional
- 1/4 tsp ground allspice optional
For the Wrapping:
- 8 oz pork caul fat soaked in cold salted water for 30 minutes, drained
Instructions
- Prepare the caul fat: Place the caul fat in a large bowl of cold salted water and soak for 30 minutes. Drain and gently pat dry. Carefully unroll and spread it flat on a clean work surface. Cut into approximately 15cm x 15cm squares.
- Make the meat mixture: In a large mixing bowl, combine the ground pork, grated onion, chopped parsley, cinnamon, salt, black pepper, and dried mint and allspice if using. Mix well with your hands until all ingredients are evenly combined. Do not over-mix.
- Chill the mixture: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight. This allows the flavors to meld and makes the mixture easier to shape.
- Shape the sheftalies: Take a piece of caul fat and lay it flat. Place approximately 2 tablespoons of meat mixture near the center and shape into a small oval sausage about 8cm long. Wrap the caul fat snugly around the meat, folding in the sides as you roll. Repeat with remaining mixture. Place on a tray, cover and refrigerate until ready to grill.
- Grill the sheftalies: Prepare a charcoal grill for medium-high heat. Grill the sheftalies for 8 to 10 minutes, turning every 2 to 3 minutes, until the caul fat is golden and crisp and the internal temperature reaches 160F (71C). Avoid pressing down on them while grilling.
- Rest and serve: Remove from the grill and rest for 3 minutes. Serve immediately in warm pita bread with fresh lemon wedges, tzatziki, sliced tomatoes, and a sprinkle of dried oregano.

Tips for Perfect Sheftalies Every Time
Use the right pork. An 80/20 fat-to-lean ratio is ideal. Too lean and the sheftalies will dry out on the grill. The fat is not just for flavor — it is structural, helping the sausage hold together as the caul fat renders.
Chill the mixture. Do not skip the resting time in the refrigerator. A cold meat mixture firms up and is much easier to shape into neat parcels. It also lets the cinnamon and parsley fully perfume the meat before cooking.
Charcoal is king. Sheftalies are at their absolute best over a real charcoal grill. The smoke, the heat, and the char all contribute to the final flavor in a way that a gas grill simply cannot replicate. If you only have a gas grill, use it — but if you have the option, go charcoal every time.
Do not press them. Resist the urge to press the sheftalies down with a spatula while they cook. You will squeeze out the juices and dry them out. Let the heat do the work and turn them gently every 2 to 3 minutes.
How to Serve Sheftalies
In Cyprus, sheftalies are served simply and generously. Tuck them into warm, lightly charred pita bread with a squeeze of fresh lemon, a spoonful of thick garlicky tzatziki, sliced tomatoes, and a few thin rings of red onion. A sprinkle of dried oregano ties everything together. On the side, a Cypriot village salad of tomatoes, cucumber, olives, and halloumi is the perfect companion.
They also pair beautifully with a cold glass of Commandaria — Cyprus’s legendary sweet wine — or simply a crisp ice-cold lager on a hot day.
Storage and Make-Ahead
Sheftalies are a wonderful make-ahead dish. You can prepare and wrap them up to 24 hours in advance, keeping them covered in the refrigerator until you are ready to grill. They also freeze well uncooked — lay them on a baking sheet to freeze individually, then transfer to a freezer bag for up to 3 months. Thaw overnight in the refrigerator before grilling.
Leftover cooked sheftalies reheat well in a 350°F (175°C) oven for 10 minutes, though honestly they rarely last that long.
