A tian is a French trick for making simple ingredients look like fine dining: layers stacked in a ring mold, lifted away to reveal a clean, composed tower. Fill that tower with poached lobster, lump crab, mango, cucumber, and avocado, dress it with a truffle–white balsamic vinaigrette and a thread of hot honey, and you have a no-cook appetizer that eats like a celebration. This is my go-to first course for summer dinners and New Year’s tables alike — fifteen minutes of assembly, zero stove time if your lobster is cooked.
The Seafood Layer
Use poached, chilled lobster meat and good lump crab. Pick through the crab for shell but handle it gently — those fat lumps are the luxury you paid for. Season the seafood with Old Bay, fresh lemon and lime juice, and thinly sliced scallions. Citrus does the heavy lifting in a chilled seafood dish; it wants to taste bright, not buried.
The Fruit and Vegetable Layers
Dice the mango and cucumber small and evenly — small dice compacts better in the mold and slices cleanly when you eat it. The mango brings perfumed sweetness against the brine; cucumber brings crunch. The avocado gets a different treatment: mash it lightly and use it as the foundation layer, where it acts as the mortar holding the tower together.
The Truffle Vinaigrette and Hot Honey
Whisk white balsamic with lemon juice, then stream in truffle oil and extra-virgin olive oil until emulsified. White balsamic keeps the dressing pale and the flavors clean. Just before serving, a fine drizzle of hot honey over the top ties the whole plate together — sweet heat against cool, rich seafood is the bite people remember.
Building the Tower
Set a ring mold in the center of a chilled plate. Avocado first, pressed level. Then the dressed seafood-mango-cucumber mixture, spooned in and compacted gently with the back of the spoon — firm enough to hold, not so hard you crush it. Lift the ring straight up, crown with micro greens, dress the plate, and serve immediately.

FAQ
Can I make it ahead?
Prep every component up to 4 hours ahead and store separately, but dress and build the tians just before serving — the citrus and salt draw water out of the cucumber and mango if combined early. Add avocado last-minute to keep its color.
Can I substitute the lobster?
Poached shrimp works beautifully and costs less; all-crab is also excellent. Keep the total seafood weight about the same.
What do I serve with it?
Crisp crostini or good crackers, and something cold and white to drink. It is a first course — let it stay light.

Ingredients
- 2 whole Lobster Meat Poached, Chilled and Deshelled
- 8 ounce Lump Crab Meat
- ½ whole Mango Diced
- ¼ whole Cucumber Small Diced
- ½ whole Avocado Diced
- 1 tsp Old Bay
- 1 whole Lemon Juice Fresh Squeezed
- ¼ bunch Scallions Thinly Sliced
- ½ whole Lime Fresh Squeezed
- ½ whole Lemon Zest
- 1 ounce Micro Greens
Truffle Hot Honey Balsamic Vinaigrette
- 2 ounce White Balsamic
- ½ whole Lime Fresh Squeezed
- 4 tbsp Truffle Oil
- 4 ounce EVO
- 1 tbsp Hot Honey
Instructions
- To make vinaigrette place white balsamic and truffle oil into bowl. begin to whisk adding lemon juice. Add EVO till you reach you desired thickness. Set Aside
- Diced mango, cucumber and add to mixing bowl.
- Add lemon and lime to mixture.
- In a mixing bowl add lobster, crab meat, mango, scallions and cucumber.
- Place ring in the center of the plate.
- Halve and mash up avocado in shell and place into cooking ring. As you lower Layer.
- Add the mixture into the ring on top of avocado in the center of the plate. Push down to compress the mixture into the ring.
- Pour about one tablespoon of the honey truffle vinaigrette on top of lobster tian.
- Using the spoon gently push down and lift ring to remove. Garnish with scallions or if available use microgreens.
