Classic Chicken Parmesan

Chicken parmesan is comfort food’s greatest hit: golden breaded cutlets under molten fresh mozzarella and bright tomato sauce. Everyone has eaten a hundred versions — soggy ones, dry ones, gluey ones — and the difference between those and a great one comes down to three fundamentals: thin, evenly-cut cutlets, a disciplined breading station, and restraint with the sauce. This is the classic, done properly.

The Wine-and-Lemon Marinade

Before breading, the cutlets take a short bath in white wine, lemon, garlic, and olive oil with salt and pepper. It is a step most recipes skip and the one people taste: the acidity seasons the chicken through and keeps it juicy under its crust. Even 20–30 minutes makes the difference.

Cut Thin, Cook Even

Slice each breast horizontally into three thin cutlets. Thin cutlets cook through in the time the crust takes to brown — that synchrony is the whole secret to avoiding the classic chicken parm failure of burnt crumbs outside, pink chicken inside. If any cutlet is thicker than the rest, give it a few whacks under plastic wrap to even it out.

The Three-Tray Breading Station

Set up in order: tray one, seasoned flour; tray two, beaten eggs; tray three, bread crumbs mixed with grated cheese and chopped parsley. Flour both sides and dust off the excess — flour is glue, not coating. Through the egg, letting the extra drip away. Then into the crumbs, pressing firmly so they anchor. Keep one hand for dry trays and one for wet, or you will bread your fingers as thoroughly as the chicken.

Shallow-fry the cutlets in vegetable oil until deep golden on both sides — a few minutes per side. Drain on a rack, not paper towels, so the bottoms stay crisp.

Sauce and Cheese: Less Is More

Lay the fried cutlets in a baking dish, spoon tomato sauce over the centers — not a full flood, or the crust you just built dissolves — and top with slices of fresh mozzarella. Serve over spaghetti, with a pile of sautéed spinach, or on a toasted roll as the chicken parm sandwich of your dreams.

Can I bake instead of fry?

Yes — spray breaded cutlets with oil and bake at 425°F on a preheated tray, flipping once, about 15 minutes. You trade a little richness for an easier cleanup; the crust stays surprisingly crisp.

Fresh mozzarella or low-moisture?

Fresh, sliced and patted dry, for creamy pull and clean flavor. Low-moisture melts more evenly and browns better — a mix of both is the pro move.

How do I keep leftovers crisp?

Store cutlets and sauce separately if you can. Reheat in a 375°F oven or air fryer — never the microwave, which turns the crust to sponge.

Ingredients

  • 4 whole Chicken Breasts Sliced in Half

Chicken Marinade

  • 1 cup White Wine Chablis Preferred
  • 1 whole Lemon Juiced
  • ½ cup Olive Oil
  • 1 tsp Pepper
  • 1 tsp Salt

Bread Crumb Mixture

  • 1 ¼ cup Bread Crumb Italian Style or Panko if you have allergies
  • ½ cup Grated Cheese
  • ½ bunch Parsley Chiffonade
  • 1 ¼ cup Flour Season with Salt & Pepper
  • 3 whole Eggs Whipped
  • ½ cup Vegetable Oil
  • 1 lb Fresh Mozzarella
  • 2 cup MyPrepTable's Basic Tomato Sauce

Instructions

  • Get your flouring stations ready.
  • Slice chicken cutlets into three thin pieces each.

  • Begin to flour, egg wash, and bread crumb the chicken cutlets.
  • For tray #1 add the flour. Dust both sides.

  • For tray #2 add the whisked eggs. After flouring place chicken in egg.

  • For tray #3 add the seasoned breadcrumbs. Shred off excess egg and place chicken in seasoned breadcrumbs.

  • Place a large skillet on the stove top and begin heating oil at a medium heat. Get finished cutlets ready for pan fry.

  • Pat down the bread crumb well shake off excess and place into skillet.

  • Cook each side for 4-6 minutes adjusting your heat as needed. Cook till golden brown.

  • Once cutlets are cooked place on sheet pan and add tomato sauce and grated cheese on each piece.

  • Cut fresh mozzarella and place on top of sauce.

  • Place in pre heated oven for 6-8 minutes for cheese to melt and cutlets to cook fully.

  • When done Remove from oven cheese should be molten oven chicken.

  • Begin to plate, add more sauce, grated cheese and fresh basil. to your needs.

Notes

Feel free to substitute mozzarella with provolone cheese. A slice of ham or bacon is sometimes added to create a different flavor. Chicken Parmesan can be added onto a hero roll to make a classic hero sandwich. You can also slice a piece and place it on a salad. It is a dish that can be reutilized in a variety of ways.
