Ingredients
- 1 lb Ground Beef 80/20 Grind
- 1 lb Ground Pork Ground no Casing
- 4 whole Eggs
- 1 whole Spanish onion Medium Dice
- 6 clove Garlic Peeled
- 1 tbsp Worcestershire Sauce

- ¼ cup Ricotta Cheese
- 1 quart MyPrepTable's Basic Tomato Sauce

- 1 cup Red Wine
Instructions
- Gather all of your ingredients.

- In a mixing bowl, add the ground beef and ground pork and mix well. Set them side.

- In a food processor, add onions, garlic, parsley and red pepper flakes.

- Add olive oil slowly to enhance the puree mixture well to almost a liquid substance. When you reached desired consistency add to your meat mixture and continue to combine flavors..
- Add the red wine vinegar, eggs, Worcestershire and grated cheese to a mixing bowl.
- Mix all your ingredients well to combine the beef and pork mixture evenly spreading out all ingredients.
- Using a 4 oz. ice cream scoop, scoop out a ball into your hand and roll in clockwise motion till meatball is well rounded, then place on tray.

- Place the rondo pot on top of stove adding a bit of olive oil to a well heated pot.
- Sprinkle the meatballs with a light dusting of flour and begin placing them in rondo.

- Once all sides of the meatballs are seared, add a cup of red wine to the pan to deglaze bottom of pan.
- Add MyPrepTable's Basic Tomato Sauce and simmer meatballs in the sauce for 20-25 minutes or until done.

- Bowl three meatballs and place sauce on top. Add a dollop of ricotta cheese and fresh basil to finish plating your dish. Buon appetito!
