Baked feta pasta earned its viral fame honestly: a block of feta and a pan of cherry tomatoes go into the oven, and twenty-five minutes later they collapse into a creamy, tangy sauce that needs nothing but a stir and hot pasta. This is the MyPrepTable version — same effortless method, with the details that turn a trend into a keeper: real Greek feta, good olive oil, and garlic added at the right moment.

The Feta Makes or Breaks It

Use a block of true Greek feta in brine — sheep’s milk, or sheep-goat blend. It bakes into a creamy, salty core that melts into sauce. Pre-crumbled feta is drier, coated to prevent clumping, and never gets luscious; cow’s-milk “feta-style” blocks turn chalky. This is a five-ingredient dish, and the feta is doing half the work.

Method, Start to Finish

Set the feta block in the center of a baking dish, surround it with cherry tomatoes, and douse everything generously with olive oil, salt, pepper, and chili flakes. Bake hot — around 400°F — until the tomatoes burst and blister and the feta is soft and golden at the edges. Add the minced garlic in the final few minutes or stirred in right after baking; buried under the oil from the start it can turn bitter. Then crush, stir, and watch the tomato juices, oil, and feta emulsify into a pink-tinged cream.

Marry It to the Pasta

Cook short pasta — rigatoni, penne, shells — just shy of al dente, and reserve a cup of the starchy water before draining. Fold the hot pasta into the sauce with a splash of that water; the starch binds everything glossy. Finish with torn basil and an extra thread of olive oil.

FAQ

Can I use big tomatoes instead of cherry?

Cherry and grape tomatoes are sweeter and burst into sauce; large tomatoes go watery. Off-season, cherry tomatoes are also the most reliable tomato in the store.

Why did my sauce come out oily instead of creamy?

It needed the pasta water — the starch is the emulsifier. Add a splash and stir hard; it comes together.

Does it reheat?

Two to three days refrigerated. Reheat gently with a splash of water or milk to loosen the sauce.

Ingredients

  • 6 whole Vine Ripe Tomato Tops Cut Scooped Out
  • 1 bunch Basil Chiffonade
  • 3 cup Olive Oil Extra Virgin
  • 2 lb Feta Cheese Crumbled
  • 3 clove Garlic Minced
  • 1 To Taste Salt & Pepper
  • ¼ cup Sugar
  • 1 tbsp Red Pepper Flakes
  • 1 cup Romano Cheese Grated
  • 3 lb Fresh Pasta of Choice Al Dente

Instructions

  • Gather ingredients, place your sauce pot with water and salt on stove and bring to boil.

  • Using a pairing knife, cut the tops off the tomato and set aside.

  • Using a spoon scoop out the insides of the tomato into a mixing bowl. Set aside.

The Feta Stuffing

  • Take out tomato inside and rough chop then place back into bowl.

  • Crumble the feta into the mixing bowl with the tomato insides.

  • Chiffonade the basil and add to feta with garlic, red pepper flakes, salt and pepper.
  • Mix the ingredients well, then take a tomato and stuff it until the mixture reaches the top of the tomato. place onto the baking tray.

  • Continue the last step until all the tomatoes are stuffed and all the mixture is used.

  • Once tomatoes are stuffed and placed snug into the tray, drizzle about 2 cups olive oil, into the tray.
  • Sprinkle grated cheese any extra basil ,salt, pepper, sugar and place the top back onto the tomato.

  • Place into a 375° F oven for about 30-45 minutes depending on tomato size.
    What your looking for is a golden brown caramelized tomato.

  • As tomatoes bake, in your sauce pot add fresh pasta of choice and cook to al dente.

  • Once complete use melted butter or olive oil and add pasta to coat to prevent sticking.
  • Place the desired portion of pasta in a Pasta Bowl, remove your baked tomatoes and place one tomato over the pasta. Season with grated cheese, cracked black pepper and serve.
